Avocado Pasta

I shared some of my favorite pinterest avocado finds last time (see my full avocado pinterest board here), but I saved this recipe for a special post all its own: avocado pasta. This has been one of my husband and my favorite recipes all summer – its quite healthy pasta recipe which still has a tasty creamy sauce – just this time the creaminess is from avocadoes (and great for your skin and hair!) instead of cream (which is really just great for lovehandles). It also comes together in about 15 minutes!

Vegetarian green avocado pasta

Avocado Pasta Recipe
makes about 4 servings

Ingredients

  • 2 garlic cloves
  • 3 small avocadoes (or about 1.5 large ones)
  • 7 oz. spaghetti
  • 1 Tbsp. olive oil (for cooking pasta – if you want)
  • 2 Tbsp. lemon juice
  • 2 Tbsp. parmesan cheese

1. Cook pasta according to box directions. I usually add a tablespoon or so of olive oil to the boiling water to keep noodles from sticking together.I like to use pasta high in fiber and protein – this time I used Barilla Plus.

2. While pasta is cooking, add garlic, lemon juice, avocados, and 1 Tbsp. parmesan cheese to food processor. Pulse until well blended.

3. Once pasta is cooked and drained, mix sauce into pasta. Garnish with remaining parmesan cheese, and enjoy!

Pesto Chicken Pasta

As I mentioned last time in my pesto recipes post, I’m a huge fan of pesto (view my pinterest board of pesto-related recipes here). Here’s one of my favorite (super simple!) pesto recipes:

Chicken Pesto Pasta

Pesto Chicken Pasta
makes 6 servings (as a full meal without sides – more otherwise)

Chicken Pesto Pasta Ingredients

Ingredients:
14 oz. penne pasta (I like to use Barilla Plus – it has lots of protein and fiber and we love the taste)
1 cubed cooked chicken breast*
4 oz. pesto (I use Classico)
1 Tbsp. parmesan cheese plus more for garnish
1 tsp. olive oil (optional)

*We poach a few chicken breasts at the beginning of each week to use for the rest of the week, so this comes together really quickly!

1. Cook pasta according to package directions.
2. While pasta is cooking, mix together pesto, parmesan, and olive oil in a small bowl.
3. Drain pasta, and mix pasta with pesto mixture and chicken.
4. Garnish with additional parmesan chesse

And your done! Takes me less than 15 minutes. It reheats well, but my husband likes it even better cold than warm! Also stores frozen well. Each serving has: 350 calories (105 from fat), 17.5 g protein, 5 g fiber.
